Shrimp & Grits is a popular Southern recipe that originated as a breakfast dish, but is now enjoyed for lunch, brunch, and dinner! The recipe typically consists of corn grits that are cooked in milk and butter until creamy and thick, and then topped with flavorful shrimp. My rendition is not only buttery, flavorful, and delicious, but is SIMPLE/EASY & DAIRY-FREE!

Here is my Shrimp & Grits recipe: dairy-free and milk lovers will ENJOY!

Step 1: "CHESSY" GRITS - In a saucepan slowly stir grits into boiling chicken broth. Reduce heat to medium-low; cover. Cook for 4-5 minutes or until thickened, stirring occasionally. Add dairy-free cheddar cheese and garlic powder. Continue cooking until cheese melts, about 5 minutes. Sprinkle with paprika.

Step 2: In a large skillet over medium heat, add olive oil. Once hot and simmering, add in the turkey bacon and cook until hot and crisp, about 10 minutes (flipping after 5 minutes). In the meantime, pat dry the shrimp.

Step 3: Set the bacon aside and leave the fat in the pan. Add in the vegan butter and let it melt for about 1 minute. Add the shrimp and season with cajun seasoning and garlic powder.

Step 4: Sear the shrimp for about 4 minutes (flipping after 2 minutes). Add in the diced tomatoes & green chiles and the chicken broth. Cook for another 2-3 minutes (until heated). As soon as you see the shrimp is golden-brown and no longer raw, turn off the heat, and set aside.

Step 5: FINISH - Divide the grits into 4 serving bowls. Divide the shrimp and sauce evenly into the 4 bowls over the grits. Garnish with bacon crumbles and scallions. Serve and ENJOY!
